OMG...I made this in 2009 but didn't really taste that good, so today I tried it again...OMG....so so good...I can eat the whole batch.

Brown Sugar Fudge
2 tablespoons butter or margarine (
used butter)
2 cups brown sugar, firmly packed
1/4 teaspoon salt
3/4 cup light cream (
used Half and Half)
3/4 cup coconut, pecans or walnuts (
didn't add any)
Melt butter or margarine in saucepan. Add sugar, salt and cream and stir
until sugar has dissolved. Clip a thermometer to the side of the saucepan. When
mixture begins to boil, reduce heat to medium and continue cooking to soft-ball
stage on the candy thermometer.
(240 F on Thermometer)
Remove from heat and do not stir until the outside of the pan is cool to
the touch. Beat until creamy. (
I used the electric beaters for along time....then added to the Pam sprayed loaf pan) Add coconut or nuts. Press into a greased pan.
Makes about 1 pound.
